Pecan Corn Bread Stuffing Recipe
- 1 (15 ounce.) pkg. corn bread mix
- 1 1/2 c. celery, minced
- 2 c. onion, minced
- 1/2 c. ripe olives, pitted and quartered
- 1/2 c. butter
- 1 teaspoon thyme
- 1/2 teaspoon salt
- 1/2 c. pecans, minced
- 3/4 c. chicken broth
- Prepare and bake the corn bread as the package directs.
- Cold, then coarsely crumble into a large bowl or possibly baking pan.
- Saute/fry the celery, onion and olives in butter.
- Add in the thyme, salt and pecans.
- Add in to the corn bread mix and toss lightly.
- Add in the chicken broth, mixing till moistened.
- Yield: sufficient stuffing for a 12 to 14 lb.
