Spiced Pumpkin-Bran Muffins
- 1-1/2 cups whole wheat flour
- 1-1/2 cups wheat bran
- 1/3 cup packed golden brown sugar
- 1 Tbsp. pumpkin pie spice
- 4 tsp. Magic Baking Powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 egg
- 1 cup milk
- 1/3 cup oil
- 1/4 cup molasses
- 1 cup canned pure pumpkin
- 1/4 cup finely chopped pecans
- Heat oven to 400 degrees F.
- Combine first 7 ingredients in large bowl.
- Whisk all remaining ingredients except pumpkin and nuts in medium bowl until blended; stir in pumpkin.
- Add to flour mixture; stir just until moistened.
- Spoon into 12 muffin pan cups sprayed with cooking spray; sprinkle with nuts.
- Bake 20 min.
- or until toothpick inserted in centres comes out clean.
- Cool slightly before removing from pan to serve.
