Cheddar Pasta Pie

  1. Blend first 4 ingredients in blender until smooth.
  2. Heat oil in medium saucepan.
  3. Add pasta; cook 3 min.
  4. or until golden brown, stirring occasionally.
  5. Add prepared sauce, 1 cup broth and epazote; cook on medium-low heat 5 min.
  6. or until most of the liquid is absorbed, stirring constantly.
  7. Add remaining broth; cook 8 min.
  8. or until pasta is tender, stirring frequently.
  9. Remove from heat; discard epazote leaves, if desired.
  10. Stir in 1/2 cup cheddar.
  11. Spoon into 9-inch pie plate; top with remaining Cheddar and Parmesan.
  12. Cover; let stand 10 min.
  13. before cutting into wedges.
  14. Serve topped with avocados.
