Cheddar Pasta Pie
- 1 can (8 oz.) tomato sauce
- 1 small canned chipotle pepper in adobo sauce
- 1/4 cup chopped onions King Sooper's 1 lb For $0.99 thru 02/09
- 2 cloves garlic
- 1 Tbsp. oil
- 1 pkg. (7 oz.) fideo pasta
- 2 cups chicken broth, divided
- 4 fresh epazote leaves
- 1 cup KRAFT Shredded Mild Cheddar Cheese, divided
- 2 tsp. KRAFT Grated Parmesan Cheese
- 1 avocado, sliced Whole Foods 5 ea For $5.00 thru 02/09
- Blend first 4 ingredients in blender until smooth.
- Heat oil in medium saucepan.
- Add pasta; cook 3 min.
- or until golden brown, stirring occasionally.
- Add prepared sauce, 1 cup broth and epazote; cook on medium-low heat 5 min.
- or until most of the liquid is absorbed, stirring constantly.
- Add remaining broth; cook 8 min.
- or until pasta is tender, stirring frequently.
- Remove from heat; discard epazote leaves, if desired.
- Stir in 1/2 cup cheddar.
- Spoon into 9-inch pie plate; top with remaining Cheddar and Parmesan.
- Cover; let stand 10 min.
- before cutting into wedges.
- Serve topped with avocados.
