Cyndi's famous quick & easy chili
- 1 lb small red beans (dry) or 3-4 cans
- 2 lb ground turkey or beef
- 2 jalapeno sliced (if you like it hot)
- 1 medium onion, chopped
- 1 can rotel (diced tomatoes & peppers)
- 2 cup white or brown rice
- 1 red pepper flakes, cumin' paprika' garlic powder' chili powder' tony cacheres'
- Rinse and soak beans over night
- Put beans in crock pot add enough water to cover beans about 3-4 inches.
- Cook on low 6-8 hours.
- Brown your meat' drain fat and add half the onion 1 jalapeno and the can of rotel.
- Add spices and simmer until onion and jalapeno is tender.
- Slowly add beans to meat add as much bean water as you like.
- I added it all!
- Stir together beans and meat add more spices & season to your liking.
- Simmer 10 to 20 minutes.
- Cook your white or brown rice to serve on top
- Chop the rest of the onion and jalapeno to serve on the side
- Other topping ideas shredded cheese' sour cream' cilantro, or avocado.
