Baked Chikuwa with Mentaiko and Cheese
- 2 Chikuwa
- 1/4 of a sac Mentaiko (salt-cured spicy pollack or cod roe)
- 2 Cheese
- 2 cm wide strips x 4 Toasted nori seaweed
- Slice the chikuwa in half lengthwise, then in half crosswise.
- Remove the membrane from the mentaiko.
- Cut the cheese into shapes and sizes to fit into the crevice of the chikuwa.
- (Makes 8 using 4 chikuwa.)
- Spread mentaiko in the crevice of the chikuwa.
- Top with cheese.
- Bake briefly in a oven.
- Wrap around with nori strips and serve.
