Baked Chikuwa with Mentaiko and Cheese

  1. Slice the chikuwa in half lengthwise, then in half crosswise.
  2. Remove the membrane from the mentaiko.
  3. Cut the cheese into shapes and sizes to fit into the crevice of the chikuwa.
  4. (Makes 8 using 4 chikuwa.)
  5. Spread mentaiko in the crevice of the chikuwa.
  6. Top with cheese.
  7. Bake briefly in a oven.
  8. Wrap around with nori strips and serve.
