Healthy Peanut Energy Bars
- 12 cup dry roasted peanuts
- 12 cup natural almonds (chopped) or 12 cup sunflower seeds
- 1 cup raisins or 1 cup other dried fruit
- 2 cups oats
- 1 cup crispy brown rice cereal
- 1 cup puffed wheat cereal
- 1 scoop vanilla protein powder
- 1 teaspoon cinnamon
- 14 cup toasted wheat germ
- 14 cup natural-style chunky peanut butter
- 14 cup almond butter
- 12 cup Splenda brown sugar blend
- 12 cup agave nectar
- 1 teaspoon vanilla extract
- Coat a 13x9 inch baking pan with cooking spray.
- combine all dry ingredients including cinnamon.
- combine and stir peanut butter, almond butter, splenda brown sugar, and agave nectar in large microwaveable bowl.
- microwave on high until bubbling; about 1-2 minutes.
- add vanilla and stir until blended.
- Pour the peanut butter mixture over dry ingredients and stir until coated>.
- Transfer mixture to prepared pan.
- Press down firmly.
- (helps to coat your fingers with cooking spray).
- Let stand about 1 hour to harden or refrigerate.
- cut into 16 bars.
