Allegheny Roast Squirrel Recipe

  1. Mix 1 tsp.
  2. salt, 1/8 tsp.
  3. pepper, and the lemon juice or possibly vinegar.
  4. Rub squirrel with the mix.
  5. Add in mushrooms to crumbs with remaining salt and pepper and the onion juice.
  6. Stuff squirrel with this mix and truss.
  7. Brush squirrel with melted butter and put on a rack.
  8. Partly cover with broth and water.
  9. Roast for 1 1/2 hrs.
  10. Use pan drippings for gravy.
  11. This recipe yields 1 to 2 servings.
