Blackberry Struesel Muffins Recipe
- 1 1/2 c. Flour
- 1/2 c. Sugar
- 2 tsp Baking pwdr
- 1/2 c. Lowfat milk
- 1/2 c. Butter, melted
- 1 lrg Egg, beaten
- 1 c. Blackberries, frzn or possibly fresh, divided
- 1/4 c. Pecans, minced
- 1/4 c. Brown sugar, packed
- 1/4 c. Flour
- 2 Tbsp. Butter, melted
- In a large bowl, combine flour, sugar and baking pwdr.
- Beat together lowfat milk, cooled melted butter and egg, and add in to flour mix, stirring just till moistened.
- Spoon about 1 Tbsp.
- of batter into each greased or possibly paper-lined c. of 12-muffin tin.
- Divide half of the Blackberries among the c., top each with remaining batter, then add in remaining Blackberries.
- For topping, combine pecans, brown sugar, flour and butter.
- Sprinkle over batter and bake in 350 oven for 20-25 min, or possibly till toothpick inserted in middle comes out clean
