Cannoli Pie Recipe
- 1 ct ricotta cheese - (15 ounce)
- 1 c. confectioners' sugar
- 1/4 c. minced maraschino cherries
- 1/4 c. minced blanched almonds
- 1/4 c. miniature semisweet chocolate chips
- 1 x chocolate graham cracker pie crust (9" dia)
- In a large bowl, combine the ricotta cheese and confectioners' sugar; mix till smooth and well combined.
- Stir in the cherries, almonds, and chocolate chips.
- Spoon into the pie crust, cover, and freeze for at least 3 hrs.
- Remove from the freezer and allow to sit for at least 10 to 15 min before cutting.
- Cover and store any leftovers in the freezer.
- This recipe yields 8 servings.
- Comments: I like to top each slice with a dollop of whipped cream and a maraschino cherry before serving.
