Cannoli Pie Recipe

  1. In a large bowl, combine the ricotta cheese and confectioners' sugar; mix till smooth and well combined.
  2. Stir in the cherries, almonds, and chocolate chips.
  3. Spoon into the pie crust, cover, and freeze for at least 3 hrs.
  4. Remove from the freezer and allow to sit for at least 10 to 15 min before cutting.
  5. Cover and store any leftovers in the freezer.
  6. This recipe yields 8 servings.
  7. Comments: I like to top each slice with a dollop of whipped cream and a maraschino cherry before serving.
