Baked Broccoli Frittata Recipe
- 1 c. onions sliced
- 1/2 c. green bell pepper sliced
- 1 x clove garlic chopped
- 2 Tbsp. butter or possibly margarine
- 6 x Large eggs
- 1/3 c. half and half
- 1/2 tsp basil
- 1/2 tsp lemon pepper seasoning
- 1 c. broccoli, frzn cooked, liquid removed
- 1 c. Monterey jack cheese shredded
- 1/2 c. parmesan cheese grated
- Heat oven to 425 .
- Generously butter a 2 qt shallow casserole or possibly 4 individual baking dishes.
- In large skillet over medium-low heat, saute/fry onions, red pepper and garlic in margarine till tender; cook slightly.
- In large bowl, beat Large eggs, half and half and seasonings till combined.
- Stir in onion-pepper mix and broccoli.
- Pour into prepared casserole.
- Sprinkle with cheeses.
- Bake at 425 for 15 to 25 min or possibly till mix is set (top will remaining moist).
- Let stand 5 min before serving.
