Bite Size Shrimp Quiches Recipe
- 1 sm Red Lobster Cocktail Shrimp Party Platter
- 1 sht frzn puff pastry - (1/2 pkg) thawed
- 3 x Large eggs
- 3/4 c. whipping cream
- 1/4 tsp salt
- 1/8 tsp freshly-grnd black pepper
- 1 pch nutmeg
- 1/8 c. Parmesan cheese
- 4 ounce sharp cheddar or possibly Swiss cheese cut into 1/2" cubes
- Preheat oven to 400 degrees.
- Lightly grease 24 two-inch muffin c..
- Place 1 unfolded pastry sheet on a lightly floured board; roll out into a 12- by 14-inch rectangle; cut into 24 rounds with 2 1/2-inch biscuit cutter.
- Fit pastry rounds in muffin c..
- In a bowl, beat Large eggs, cream, salt, pepper, and nutmeg till blended.
- Place 1 cheese cube in each pastry-lined c.; fill 3/4 full with egg mix and top with a shrimp, tail to side.
- Sprinkle with Parmesan cheese.
- Bake 10 min or possibly till puffed and golden brown.
- Serve hot.
- This recipe yields 24 quiches.
