Smoked White Wine Chicken
- 2 lb dark meat chicken (legs or thighs)
- 1 cup dry white wine or cooking sherry
- 1/2 cup water
- 1/4 cup soy sauce
- 2 tbsp worcestershire sauce
- 1 tbsp lime juice
- 1 tbsp dijon mustard
- 1 tbsp balsamic vinegar
- 2 tsp dried crushed rosemary
- 1 tsp hot sauce
- 1 tsp dried parsley
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp rubbed tyme
- 1/2 tsp black pepper
- Mix marinade, and marinade chicken overnight.
- Set up grill for Indirect Heat.
- Smoke chicken at 350F for about 1 hour or so.
- When the internal temperature is 165F remove from the grill and let rest for 10 to 15 minutes before serving.
- Allowed chicken to rest 15 to 20 minutes before serving.
- For this recipe I used Applewood for the smoking.
