Roast Beef

  1. Sprinkle roast with salt and pepper.
  2. In dutch oven, brown roast in hot oil, drain.
  3. Add remaining ingredients, except carrots and potatoes.
  4. Simmer, covered, 1 1/2 hours.
  5. Add vegetables, cover, and simmer 1 hour longer.
