Toasted Almond and Orange Couscous
- 1 Tbs. olive oil
- 1 medium onion, chopped
- 1 cup couscous
- 1 tsp. turmeric
- 1 cinnamon stick
- 1 whole clove
- 1 cup fresh orange juice
- 1 Tbs. orange zest
- 3 scallions, thinly sliced
- 1/2 cup toasted, slivered almonds
- salt and pepper
- Heat olive oil in a saucepan and add chopped onion.
- Saute until soft.
- Add orange juice, orange zest, turmeric, clove and cinnamon stick.
- Bring to a boil.
- Stir in couscous, cover and turn off heat.
- Let sit covered for 5 minutes.
- Remove lid and fluff with a fork.
- Gently stir in almonds and scallions.
