Sweet Potato and Persimmon Salad: Great for Autumn

  1. Dice the persimmon and sweet potato into 1.5 cm sized cubes.
  2. Soak the sweet potato in water, then microwave 3 minutes at 600 W. Combine and mix all ingredients.
  3. Combine the persimmon and sweet potato with the mixed ingredients and serve.
  4. Also good with raisins and walnuts - top with as much of them as you like.
