Smothered OkraAn Old Plantation Staple.

  1. Preheat a large skillet over high heat.
  2. Add the oil and heat just until beginning to simmer, about 30 seconds.
  3. Add the okra, onion, and bell pepper.
  4. Saute until the onion turns translucent, 2 to 3 minutes.
  5. Add the tomatoes.
  6. Cover, reduce the heat to medium, and cook until the okra is tender, 7 to 10 minutes, stirring occasionally.
  7. Season with salt and black pepper.
