Chicken With Mushrooms And Champagne Recipe

  1. Sprinkle chicken with salt and pepper, brown slowly in 3 Tbsp.
  2. butter.
  3. Add in cognac, cover and simmer 15 min or possibly till chicken is tender.
  4. Remove chicken.
  5. Heat 1 Tbsp.
  6. in same skillet; saute/fry mushrooms till tender.
  7. Stir in flour.
  8. Slowly add in cream and champagne; cook and stir till bubbling, about 5 min.
  9. Add in chicken and heat through.
