Apple Pie with Oatmeal Cookie Crumble
- 1 pie crust
- 6 large apples, peeled, sliced 1/4 inch thick
- 1/2 cup brown sugar
- 2 tbsp all-purpose flour
- 2 tsp ground cinnamon
- 1 cup apple cider
- 3 tbsp unsalted butter, melted
- 1 tsp vanilla extract
- 1 1/2 cup old-fashioned oats
- 3/4 cup loosely packed brown sugar
- 1/4 cup all-purpose flour
- 1/4 tsp ground cinnamon
- 1/4 tsp salt
- 6 tbsp unsalted butter, softened
- Preheat the oven to 375AF.
- Roll out dough on lightly floured surface to 12-inch round.
- Transfer to 9-inch-diameter glass pie dish, trim.
- Refrigerate while preparing filling and topping.
- Add all of the filling ingredients, except apples, into a small saucepan.
- Bring to a boil then reduce to a simmer for 5 minutes.
- In a large bowl, pour mixture over apples then stir to coat.
- Add filling to the pie crust.
- Combine the oats, sugar, flour, cinnamon and salt in a large bowl.
- Add the butter and use your hands to crumble it up and toss it in the mixture.
- Sprinkle topping evenly over the apples.
- Bake the pie for 45 minutes or until crumble on top is golden.
