Polish mom's Italian meatloaf
- 1 1/2 lb lean ground beef
- 1/2 cup grated parmesian cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 cup shredded provolone cheese
- 1 cup day old italian bread,cut into small cubes
- 1/4 cup milk
- 1 egg, beaten
- 2 tbsp dry parsley flakes
- 5 clove of garlic, minced
- 1 tbsp brown mustard
- 1 tbsp salt and pepper
- 2 tbsp tomato paste
- 1 tbsp olive oil
- preheat oven to 425F.
- In a bowl soak bread with milk.
- Let sit 5 minutes.
- In same bowl combine all other ingredients except for tomato paste and oil.
- Mix well
- On a parchment paper lined roasting pan, form six individual meatloafs.
- Cook meatloaves for 15 minutes.
- Mix tomato paste and oil in small bowl.
- Remove meatloaves and brush with paste mixture.
- Place meatloaves back in oven andcook an additional 25 minutes.
- MAKE SURE THE MINI LOAVES YOU MAKE ARE OF THE SAME SIZE TO ENSURE EVEN COOKING OF EACH.
