Polish mom's Italian meatloaf

  1. preheat oven to 425F.
  2. In a bowl soak bread with milk.
  3. Let sit 5 minutes.
  4. In same bowl combine all other ingredients except for tomato paste and oil.
  5. Mix well
  6. On a parchment paper lined roasting pan, form six individual meatloafs.
  7. Cook meatloaves for 15 minutes.
  8. Mix tomato paste and oil in small bowl.
  9. Remove meatloaves and brush with paste mixture.
  10. Place meatloaves back in oven andcook an additional 25 minutes.
  11. MAKE SURE THE MINI LOAVES YOU MAKE ARE OF THE SAME SIZE TO ENSURE EVEN COOKING OF EACH.
