Easy Moussaka Recipe

  1. Advance Preparation: Chop eggplant; place in skillet.
  2. Add in 1/4 c. water.
  3. Cover and simmer till tender, about 10 to 15 min.
  4. Pour into a 2 qt baking dish.
  5. In same skillet brown the meat, onion and garlic; drain.
  6. Stir in tomato sauce, next 3 ingredients, 1 tsp.
  7. salt and 1/4 tsp.
  8. pepper.
  9. Cook, covered for 10 min.
  10. Stir in 1 c. of the cheese.
  11. Spoon over eggplant.
  12. Cover; refrigerateup to 24 hrs.
  13. Before Serving: Bake, covered at 350 degrees for 45 min.
  14. Uncover; top with remaining cheese.
  15. Bake 15 min longer.
