Grilled Sesame-Tofu Skewers with Ginger Peanut Sauce

  1. Combine orange juice, 2 Tbs.
  2. soy sauce, sesame oil, 1 tsp.
  3. garlic, and red pepper flakes.
  4. Let stand 15 minutes at room temperature.
  5. Fold in tofu, cover, and marinate 1 hour or overnight, stirring occasionally.
  6. Soak 16 wood skewers in cold water 1/2 hour.
  7. Preheat grill or oven broiler.
  8. If using broiler, coat broiler pan with cooking spray.
  9. Drain tofu, and thread on skewers.
  10. Place on broiler pan, if using.
  11. Broil or grill 5 to 7 minutes, or until lightly browned on all sides, turning occasionally.
  12. Whisk together peanut butter, remaining 1 tsp.
  13. garlic, ginger, brown sugar, remaining soy sauce, and 1/3 cup warm water to make thick sauce.
  14. Serve skewers with dipping sauce.
