Chocolate Chip & Coconut Granola Bars
- 2 cups Oatmeal
- 2- 1/2 cups Puffed Brown Rice (or Rice Krispies)
- 6 Tablespoons Ground Flax Seed
- 1 cup Unsweetened Coconut
- 1/2 cups Chopped Almonds
- 1 cup Honey
- 1/2 cups Brown Sugar
- 2 teaspoons Vanilla
- 1- 1/4 cup Peanut Butter
- 1 cup Chocolate Chips
- 1/2 cups Butterscotch Chips
- In large bowl, mix together oats, puffed rice, flax seed, coconut, and almonds.
- On the stove, heat honey and brown sugar until boiling.
- Boil for 2-3 minutes.
- Take off burner and mix in vanilla and peanut butter (I prefer crunchy).
- Pour over dry ingredients and mix well.
- Add in chocolate and butterscotch chips.
- Pour in 9 x 13 baking dish that has been sprayed with Pam.
- Cover with waxed paper and press down mix into pan.
- Refrigerate for 30 minutes to an hour.
- Cut into bars and individually wrap in Saran wrap.
- Try and not eat them all in one night!
