Chocolate Chip & Coconut Granola Bars

  1. In large bowl, mix together oats, puffed rice, flax seed, coconut, and almonds.
  2. On the stove, heat honey and brown sugar until boiling.
  3. Boil for 2-3 minutes.
  4. Take off burner and mix in vanilla and peanut butter (I prefer crunchy).
  5. Pour over dry ingredients and mix well.
  6. Add in chocolate and butterscotch chips.
  7. Pour in 9 x 13 baking dish that has been sprayed with Pam.
  8. Cover with waxed paper and press down mix into pan.
  9. Refrigerate for 30 minutes to an hour.
  10. Cut into bars and individually wrap in Saran wrap.
  11. Try and not eat them all in one night!
