Mediterranean Garden Salad

  1. Combine first 4 ingredients; set aside.
  2. Combine salad greens and parsley.
  3. Refrigerate both until ready to use.
  4. For each serving: Combine 4 oz.
  5. (115 g) pepper mixture, 3 oz.
  6. (85 g) salad greens mixture and 1 fl oz (30 g) dressing.
  7. Plate and top with 2-1/4 oz (65 g) tomatoes.
