Big Show Chicken Sandwich
- 6 boneless skinless chicken breasts
- 6 thick slices hickory smoked bacon
- 13 cup light brown sugar
- 1 tablespoon chili powder
- 14 teaspoon ground cumin
- 14 teaspoon granulated garlic
- 12 teaspoon ground pepper
- 12 teaspoon red pepper flakes
- 12 teaspoon salt
- 6 whole-grain buns
- sliced tomatoes
- 14 large cucumber
- 12 teaspoon plus 1/8 teaspoon salt
- 3 tablespoons finely diced red onions
- 1 large garlic clove, minced
- 2 tablespoons thinly sliced chives
- 34 cup sour cream
- 14 teaspoon Worcestershire sauce
- 12 teaspoon fresh lemon juice
- 14 teaspoon ground pepper
- Preheat oven to 350F.
- Line a baking sheet with foil.
- Grease a roasting rack and place in the pan.
- Wrap each chicken breast with bacon.
- Combine sugar and seasonings in a bowl.
- Sprinkle mixture over chicken.
- Place on prepared rack.
- Bake until chicken is cooked through, about 30 minutes.
- Transfer chicken to a cutting board.
- Let rest 5 minutes.
- Cut chicken into slices.
- Arrange chicken on buns.
- Top with tomatoes and tzatziki.
- For Tzatziki sauce, peel and seed cucumber.
- Grate it on a box grater.
- Sprinkle with 1/2 teaspoon salt.
- Let stand 2 minutes.
- Drain well.
- Mix cucumber with all remaining ingredients.
