Honey, Almond & Quinoa Crusted Salmon

  1. Preheat oven to 400F.
  2. Place salmon skin side down in a baking dish and pat dry with a paper towel.
  3. Spoon mustard onto salmon and spread until flesh is almost completely covered.
  4. In a small bowl, combine almonds, quinoa and honey.
  5. Stir to form a sticky mixture.
  6. Cover mustard-covered salmon with almond-quinoa crust.
  7. Bake on center rack for 20 - 25 minutes, until salmon flakes easily with a fork.
  8. Remove and let sit for 2 - 3 minutes.
  9. Serve along with a fresh garden salad and her quinoa mushroom risotto.
