Strawberry Shortcake with Vanilla Ice Cream Cake

  1. MAKE STRAWBERRYS
  2. Combine the sliced strawberrys with the granulated sugar, combine well.
  3. Cover and keep at room temperature an hour until very juicy, then chill until needed.
  4. MAKE VANILLA CAKE
  5. Place ice cream in refrigerator for one hour to soften.
  6. Preheat oven to 425.
  7. Spray a 9 by 13 inche baking pan lightly with non stick spray.
  8. Line bottom of pan with parchment paper.
  9. Remove ice cream to a large bowl.
  10. In a food processor combine flour, cold butter cubes and vanilla.
  11. Pulse until mixture looks like a crumbled course meal.
  12. Stir into ice cream in bowl, mix with a spoon then with hands gently knead cold dough until it just starts to clump up.
  13. Drop clumps of dough evenly into prepared pan.
  14. Bake about 20 minutes until light golden brown.
  15. Cool on a rack 15 minutes then lift out carefully using the parchment, cake can break if your not careful.
  16. Finish cooling and cut into sqares
  17. MAKE WHIPPED CREAM
  18. In a large chilled bowl beat heavy cream until soft peaks form, add sugar and vanilla and beat until stiff, keep cold.
  19. MAKE STRAWBERRY SHORTCAKES
  20. Place a cake square on a plate, add strawberrrys and some juice on each portion.
  21. Top with whipped cream.
  22. Garnish with chocolate shavings and decorated sliced strawberry slices.
  23. To decorate strawberry slices.
  24. Put glitter sprinkles or any you like on a plate press thick slices of strawberrys in sprinkle on both sides to adhere.
