Lemony Mint Tabbouleh
- 1-1/2 cups uncooked bulgur, rinsed
- Hot water
- 3 qt. chopped fresh parsley, tightly packed
- 3 cups tomatoes, finely chopped
- 1-1/2 cups English cucumbers, finely chopped
- 1-1/2 cups scallions, finely chopped
- 1 cup fresh mint, finely chopped
- 3 cups shredded romaine lettuce, tightly packed
- 1 cup Kraft Calorie-Wise Zesty Italian Dressing
- 3/4 cup fresh lemon juice
- Place bulgur in large bowl; add enough hot water to cover by 2 inches.
- Cover bowl with plastic wrap.
- Let stand 30 min.
- Combine parsley, tomatoes, cucumbers, scallions and mint in separate large bowl.
- Drain bulgur in a colander, pressing gently to remove excess water.
- Add bulgur to parsley mixture along with lettuce, dressing and lemon juice; toss lightly to combine.
