Lemony Mint Tabbouleh

  1. Place bulgur in large bowl; add enough hot water to cover by 2 inches.
  2. Cover bowl with plastic wrap.
  3. Let stand 30 min.
  4. Combine parsley, tomatoes, cucumbers, scallions and mint in separate large bowl.
  5. Drain bulgur in a colander, pressing gently to remove excess water.
  6. Add bulgur to parsley mixture along with lettuce, dressing and lemon juice; toss lightly to combine.
