Winesap Apple Pesto Chicken Salad

  1. On a hot grill, grill chicken breasts until fully cooked.
  2. Season with salt and pepper.
  3. Refrigerate until cooled.
  4. Once cooled, julienne chicken breasts.
  5. In a mixing bowl, combine chicken, red pepper, red onion, and apples.
  6. In a separate bowl, combine mayonnaise and pesto.
  7. Combine the chicken and pesto mixtures.
  8. Season with salt and pepper.
  9. Serve on a bed of Bibb lettuce and endive.
