Cucumber Salad
- 1 large cucumber
- 12 cup robust Italian dressing (has pieces of garlic, onions, pepers, etc.)
- 2 tablespoons sugar
- 14 of a small red onion (optional)
- Peel and chop onion until minced with manual chopper.
- Mix dressing, sugar and onions in a small bowl.
- Completely peel, lightly peel or don't peel cucumber and then slice into very thin slices (1 mm) with a slicer.
- Add cucumbers to mixture and mix thoroughly making sure each cucumber gets separated and covered by the dressing.
- Cover and chill for at least 30-40 minutes before serving.
- When storing over night the cucumbers will release water so you may want to drain it some once it does.
- After being made for 2 days I still found the cucumbers to be crispy and tasty.
