Simple Socca

  1. Put a well-seasoned cast-iron skillet or pizza pan in the oven and preheat to 450 degrees.
  2. While thats heating up, gather the ingredients.
  3. Add the salt and pepper to the flour, then pour the water in slowly.
  4. Whisk the batter until smooth.
  5. Cover and let sit for at least 15 minutes.
  6. (You can let it sit for as long as 12 hours.
  7. Which is good to know, if youre making a lot of it.)
  8. Take the hot pan out of the oven and carefully pour in 2-3 tablespoons of oil.
  9. Swirl to coat.
  10. Pour in the batter and put back in the oven for 15 minutes.
  11. Take the pan out of the oven, and with two spatulas carefully flip the pancake so the topside is now face down.
  12. Let it sit for a couple of minutes to brown.
  13. Cut and serve along with cold beer or wine.
