Citrus Dressed Asparagus
- 1 lb asparagus
- 2 teaspoons olive oil
- 4 teaspoons fresh lemon juice
- 4 teaspoons orange juice
- 1 pinch cayenne
- salt and pepper
- Trim asparagus.
- Rinse the spears and cut them into 2-3 inch pieces.
- Steam the asparagus in about an inch of water for about 7-10 minutes, or until just tender.
- Meanwhile, whisk together the olive oil, lemon and orange juices, cayenne and salt and pepper.
- As soon as the asparagus is ready, remove it to a serving bowl and pour the dressing over.
- Serve warm.
