Miso Soup With Peas and Shiitakes

  1. In a large pot combine mushrooms, quinoa and broth.
  2. Bring to a boil.
  3. Reduce heat and simmer, stirring occasionally, for 20 minutes.
  4. Stir in peas, reduce heat and simmer, for 4-5 minutes or until tender.
  5. Stir in miso and vinegar.
  6. Stir in basil.
  7. Season to taste with salt and pepper.
