Rice & Peas
- 3 cup Rice
- 1 cup Of tinned or fresh red peas (either kidney beans or pigeon peas)
- 5 clove Cloves of Garlic finely choppd
- 1 Uncut Scotch Bonnet pepper (1 jalapeno pepper may be used as a substitute)
- 1 cup Tin or cup of coconut milk
- 1 tsp Salt
- 1 tsp Black Pepper
- 2 Sprigs of Fresh Thyme (2 teaspoons of dried thyme may be ueed as a substitute)
- 3 Scallion (spring onions may be used as a substitute)
- Cooking If you are using fresh peas (kidney beans) then wash these
rice, fresh red peas, garlic, scotch bonnet pepper, coconut milk, salt, black pepper, thyme, scallion
