Onion Gratin
- Salt and black pepper to taste
- 1 1/2 pounds pearl or spring onions, trimmed
- Butter for the dish
- A small grating of nutmeg
- 1 cup heavy cream
- Bring a pot of water to a boil and add salt.
- Preheat the oven to 400F.
- Drop the onions into the water and leave them there for a minute.
- Peel them, then put them in a buttered ovenproof dish large enough to hold them in one layer.
- Sprinkle them with salt, pepper, and a little nutmeg, then pour the cream over all.
- Bake until the top is brown and the onions are soft, about 30 minutes.
