Boston Lettuce, Orange And Onion Salad With Citrus Vinaigret Recipe
- 3 Tbsp. fresh orange juice
- 1 tsp fresh lemon juice Salt to taste Freshly-grnd black pepper to taste
- 1/3 c. extra virgin olive oil
- 2 x Boston lettuce heads separated into leave rinsed and spun dry
- 1 x red onion cut thin rounds, soaked in ice and cool water for 1 hour, and patted dry
- 4 x navel oranges rind, pith cut away and the flesh cut crosswise into 4 rounds
- 3 Tbsp. snipped chives
- In a small bowl whisk together the juices and salt and pepper to taste.
- Add in the oil in a stream, whisking, and whisk the vinaigrette till it is emulsified.
- On each of 8 chilled salad plates arrange some of lettuce, the onion slices, and 2 orange slices, drizzle the vinaigrette over the salads, and sprinkle the salads with the chives.
- This recipe yields 8 servings.
