Rice Pilaf

  1. Saute scallions in butter over low heat; add rice, stirring to coat all grains.
  2. Add remainder of ingredients except parsley.
  3. Bring to a boil; lower heat and cook, covered, for 20 minutes.
  4. When done, toss with parsley, if desired.
