Rice Pilaf
- 2 cups chopped scallions
- 3 tablespoons butter
- 1 12 cups uncooked long grain rice
- 3 cups liquid (water,chicken broth or a combo of both)
- 1 12 cups shredded carrots
- 12 teaspoon dried thyme
- 12 teaspoon salt
- parsley, if desired
- Saute scallions in butter over low heat; add rice, stirring to coat all grains.
- Add remainder of ingredients except parsley.
- Bring to a boil; lower heat and cook, covered, for 20 minutes.
- When done, toss with parsley, if desired.
