Oven-Baked Rum-Raisin-Apple Graham-Cracker Pie
- 1 each graham cracker pie crust readytofill
- 20 ounces apples piesliced, unsweetened, not pie filling
- 1 1/2 cups raisins, seedless
- 13 cup rum 80proof
- 6 tablespoons brown sugar
- 2 tablespoons cornstarch
- 2 teaspoons vanilla extract
- 2 teaspoons orange zest grated
- 1 1/2 teaspoons pumpkin pie spice
- 1/4 teaspoon salt
- Unwrap piecrust.
- Drain apples and combine with remaining ingredients.
- Spoon into shell.
- Invert an aluminum pie pan over the filling to protect from drying out while baking, or cut a circle of aluminum foil and place over the filling.
- Bake in a preheated 425 oven for 35 to 40 minutes.
- Cool before cutting or serve chilled.
