Wartime Lemon Pie
- 1 lemon, juice, and grated rind
- water equal to the amount of juice from the lemon
- 25 large marshmallows, cut in half
- 3 egg yolks, beaten
- 3 egg whites, beaten
- 1 pinch salt
- baked pie shell
- Juice 1 lemon and grate the rind.
- add as much water as there is juice.
- Put in double boiler and add marshmallows.
- When thoroughly melted, add beaten yolks and cook until thick.
- Add beaten whites.
- Stir well.
- Cool slightly.
- Pour into baked Pie shell.
- Serve with whipped cream topping.
