Upside-Down Lime Surprise

  1. Drain pineapple, reserving juice.
  2. Arrange 7 of the pineapple slices on bottom of 9-inch round cake pan.
  3. Place 1 cherry half, cut-side up, in center of each pineapple slice.
  4. Chop remaining pineapple slices; set aside.
  5. Stir boiling water into dry gelatin mix in large bowl at least 2 min.
  6. until completely dissolved.
  7. Add enough ice to reserved pineapple juice to measure 1-1/2 cups.
  8. Add to gelatin mixture; stir until ice is melted.
  9. Remove 1 cup of the gelatin; set aside at room temperature.
  10. Stir chopped pineapple into remaining gelatin.
  11. Refrigerate 25 min.
  12. or until thickened.
  13. Spoon over pineapple slices in pan.
  14. Refrigerate 20 min.or until set but not firm (sticks to finger when touched).
  15. Add reserved 1 cup gelatin gradually to cream cheese in medium bowl, beating with wire whisk until well blended.
  16. Pour over gelatin layer in pan.
  17. Refrigerate 4 hours or until firm.
  18. Unmold.
  19. Store leftover gelatin in refrigerator.
