AMIEs Spaghetti with fresh Tomatoe
- 1 red chilli, deseeded and finely chopped
- 200 grams ball mozzarella or burrata, torn into pieces
- 2 shallots, finely chopped
- 2 tbsp extra virgin olive oil
- 1 zest 1 lemon
- 1 tbsp red wine vinegar (balsamic vinegar)
- 2 tsp sugar
- 300 grams tomatoes, diced
- 1 fresh basil leaves, torn to serve
- 1 salt and pepper, to taste
- 320 grams spaghetti
- Bring a large pot of water to boil.
- Add a tablespoon of salt and a splash of oil.
- Cook the pasta following pack instructions, or until al dente.
- Put the chilli, shallots, lemon zest, oil, vinegar, sugar and tomatoes in a bowl.
- Add salt and pepper and stir to combine.
- Drain the pasta and combine together with the tomatoe mixture and mozzarella.
- Scatter over the snipped fresh basil leaves.
- Serve, share and enjoy!
