Puerco Con Chile Rojo Con Arroz

  1. First julienne the onions and put a nice chop on the sweet mini peppers, also mince your garlic.
  2. Before we sweat down our veggies we are gonna sear our pork at the bottom of the hot chefs pot.
  3. Next were going to sweat down the peppers, onion and garlic in some olive oil.
  4. Until they are nice and soft
  5. Now we're gonna hit the veggies with a lot of chili powder.
  6. Some smoked paprika, salt, pepper, cumin and a cup of tomato sauce and the diced green chili
  7. Let's get the rice going.
  8. It'll be done in 12 minutes
  9. We let the veggies simmer in this chili sauce for 30 minutes and then we drop in our seared pork and finish it in the sauce.
  10. Cooking the pork to medium
  11. We're plating the Chile pork sauce over some nice boiled white rice.
  12. Top with queso fresco
