Stuffed Pork Chops
- 1 whole Chorizo Sausage, Removed From Casing And Cooked
- 1/4 cups Goat Cheese, Softened
- 1/4 cups Finely Diced Red Pepper
- 4 sprigs Fresh Thyme, Small, Chopped
- Seasoning Salt And Pepper
- 4 whole Thick Cut Pork Chops
- Combine the sausage, cheese, red pepper, thyme and pepper to taste.
- Slice the pork chops to create a pocket.
- Stuff with the sausage mixture.
- Tie the pork chops 3 times with kitchen twine, evenly spaced.
- BBQ for 15-20 minutes at 325 degrees F until the pork chops are cooked through.
- Enjoy!
