Buffalo Chicken Sloppy Joes - Healthier
- 1 teaspoon canola oil
- 12 medium onion, chopped fine (about 1/2 c)
- 12 cup grated carrot, about 1 large carrot
- 1 lb lean ground chicken breast
- 12 teaspoon Montreal chicken seasoning, my addition
- 18 teaspoon garlic granules, my addition
- 12 teaspoon salt
- 18 teaspoon pepper
- 8 ounces tomato sauce
- 14-12 cup hot sauce, I used 1/2 C Frank's Red Hot (to taste)
- 12 cup blue cheese dressing, your favorite blue cheese dressing with crumbled blue cheese I suggest The Ultimate Creamy Blue Cheese Dressing & Dip
- 4 lettuce leaves, for garnish
- 4 soft rolls
- Heat oil in a saute pan over medium heat.
- Add onions and carrots.
- Cook until onions become translucent and carrots are softening, about 5-6 minutes.
- Add the ground chicken, and cook until done, sprinkle in the salt & pepper & dry seasonings, breaking up the meat as it cooks.
- Stir in the tomato sauce and hot sauce; simmer for 20-30 minutes.
- Add a lettuce leaf to your roll, then spoon on the chicken mixture.
- Top with blue cheese dressing or crumbles for serving.
- Serve with oven fries or onion rings.
