Shrimp Lugosi
- 1/4 cup prepared horseradish
- 1-1/2 cup catsup
- 1/3 cup chili sauce
- 1/4 cup minced yellow onion
- 1/4 cup fresh lemon juice
- 1/4 tsp. Tabasco (or to taste)
- 4 lb. raw lg. shrimp in the shell
- Mix all ingredients except shrimp in a large bowl.
- Cover and chill.
- Add 2 teaspoons salt to 2 quarts water and bring to a boil.
- Place shrimp in water and return to a boil.
- Boil 3-5 minutes.
- Do not overcook.
- Drain immediately and chill.
- Removing the shells is easy - pull slightly to separate body from the tail.
- Pull off the shell.
- With a small pointed knife, cut along outside curvature of the shrimp and lift out black sand vein, if desired.
- (The vein is harmless but not aesthetically pleasing.)
- Leave the tail attached as a "handle."
