Monterey Chicken
- 4 each Boneless/Skinless Chicken Breasts
- 1 cup BBQ Sauce
- 1 1/2 cup Colby Jack Cheese blend
- 8 slice Bacon
- 2/3 cup Diced Tomatoes
- 1/4 cup Chopped Chives
- Preheat oven to 375F, while heating, Pound Chicken Breasts with tenderizer to flatten.
- (This helps chicken get tender & juicy and hold toppings)
- Bake Chicken for 20 minutes on a baking pan (use foil and non stick spray before placing chicken onto pan)
- Fry Bacon while chicken cooks.
- (Do not burn)
- Pull chicken from oven, drain juices, cover with BBQ sauce.
- Lay 2 strips bacon in an X pattern on top of BBQ sauce, sprinkle with diced tomatoes, then sprinkle cheese over tomatoes covering the chicken breast.
- Turn oven to broil and allow to heat up.
- Place Chicken under broiler until cheese melts.
- Remove from broiler and sprinkle with chives!
