Wapsipinicon Salad Recipe

• 1/4 c. oil
• 2 tbsp. salad vinegar
• 1 teaspoon Worcestershire sauce
• 1/2 teaspoon salt
• 1 tbsp. parsley, minced
• 1 (15 ounce.) can artichoke hearts, liquid removed & sliced
• 2 lg. pink grapefruit, sections
• 6 c. salad greens, washed & crisped (spinach, romaine, iceberg or possibly leaf lettuce)

1. Combine all of the dressing ingredients, mix and pour over the artichoke hearts.
2. Allow to stand several hrs.
3. Peel and section grapefruit with a sharp knife so which membrane is removed.
4. Combine with greens, artichokes and dressing; toss gently but thoroughly.
5. Serves 6 to 8.
