  1. bake chicken for 1 hour at 375
  2. once done allow adequate cooling time then pull apart in small pieces go with the grain of the chicken, rid the unappealing parts (veins, fat) combine all in a large bowl, be generous with your BBQ sauce it needs to be wet and saucy
  3. add cheese if desired, warm in oven at 275 until your ready to roll.. cook only a cpl hours before event to avoid poor taste and hardening of the rolls.
