Salmon and Eggs
- 1 Tbsp. olive oil
- 1/2 cup finely chopped red onions
- 4 whole eggs
- 2 egg whites
- 1/2 cup BREAKSTONE'S or KNUDSEN 2% Milkfat Low Fat Cottage Cheese
- 2 Tbsp. KRAFT Grated Parmesan Cheese
- 2 Tbsp. chopped fresh dill
- 1 tsp. GREY POUPON Honey Dijon Mustard
- 3 oz. smoked salmon, cut into 6 slices
- Heat oven to 350 degrees F.
- Heat oil in large ovenproof nonstick skillet on medium heat.
- Add onions; cook and stir 3 min.
- or until crisp-tender.
- Whisk next 5 ingredients until well blended.
- Add to skillet; stir.
- Place skillet in oven.
- Bake 6 to 8 min.
- or until center is set.
- Cool 1 min.
- Spread mustard over salmon; place, mustard-sides down, over eggs.
- Cut into wedges.
