Tomato & Horseradish Sauce Recipe
- 1 tbsp. veg. oil
- 1/2 c. minced onions
- 2 teaspoon finely minced garlic
- 1 tbsp. red wine vinegar
- 3-4 ripe tomatoes (cut into chunks)
- 2 teaspoon tomato paste
- Freshly grnd pepper to taste
- 10 (or possibly more) fresh basil leaves
- 2 tbsp. horseradish
- Heat oil in saucepan.
- Add in onions and garlic.
- Cook, stirring, till wilted and then add in vinegar.
- Cook till vinegar is reduced to half.
- Add in tomatoes, tomato paste and pepper.
- Cook, stirring often about 5 min.
- Add in coarsely minced basil and horseradish.
- Recipe easily doubled.
- Can be stored indefinitely in airtight container in refrigerator.
- Light sauce excellent over pasta.
- Freezes well.
