Chargrilled Salmon with Mustard Cream Sauce

  1. COMBINE the wine and spring onions in a small saucepan and simmer for 2 minutes or until mixture is reduced to 1/2 cup.
  2. Whisk in the PHILLY and mustard and simmer for 3 minutes.
  3. Season then cover and keep warm.
  4. BRUSH the salmon on both sides with extra mustard.
  5. Spray a hot chargrill pan with olive oil and cook the salmon for 2 minutes each side or until just cooked.
  6. Transfer to serving plates alongside vegetables and spoon over the sauce.
  7. Serve immediately.
